You're Gonna Love My Veggies

This post has been on my blog queue for over two months now! This spring I decided that it would be good for my family to have more vegetarian meals and so far it's been a great success ! I love using alternative grains and unfamiliar veggies no longer intimidate me. Here are a few of my family's favorite meals.

Stuffed Eggplant and Greek Pilaf

Spinach and Tomato Quiche

Fettuccine with Mushrooms and Sundried Tomatoes

Some other favorites include black bean burgers and tostadas loaded with veggies, refried beans, black beans and rice. Yummy!

Eat that Meat!

The Grimes' household possesses a scientific mystery in that somehow our two older children can maintain enough energy to meet their metabolic needs without consuming any food. OK perhaps I'm exaggerating a bit, they eat at the most three bites each before stubbornly pushing their plates aside in protest. Well after a particularly frustrating evening, battle lines were drawn as Pete and I tried to stare down our opponents in a last ditch attempt to get them to eat some food! Then brilliance struck as we came up with a fantastic idea; perhaps a rousing chant will spur them on to good deeds. And with that "Eat that Meat!" was born, and ya know what? It worked! Now the kids eat at least six bites after a few inspiring shouts of "Eat that Meat".

Frozen Banana Kabobs

Eden and Noah love bananas so I tried what I thought was a fabulous idea. I kabobbed a few bananas, dipped them in some yogurt, and rolled in granola and chocolate chips. I then placed the banana kabobs on some wax paper and froze for about an hour. Voila, frozen banana kabobs, fantastic! Except the kids didn't really get it! Noah just stared at his before declaring he was all done and Eden just licked the outside like a popsicle. Oh well, it was worth a try. My next summer-time snack idea: fruit and cheese kabobs. Hmmm, I'm sensing a food-on-a-stick theme.
